Wine of Bellet
The Bellet wine is one of the oldest in France which was probably planted during the same period as the Founding of Marseille by the Phocaeans.
Located to the west of Nice, close to the small village of Saint-Roman de Bellet, this wine enjoys the benefits of a high level of sunshine and a micro-climate which favours the slow maturation necessary for the freshness and elegance of white and red wines. The vines are rooted in strips of land known as " restanques " made up of pebbles mixed with light-coloured sand called " poudingue ". Classed as "A.O.C" in 1941, this small territory entirely within Nice's boundaries produces a range of rare and prestigious wines, well-known by the locals and the best restaurants of the region.
The three colours (red, white and rosé) are produced in equal quantities. The varieties of vine are "le Rolle" and "le Chardonnais" for white wines, "la Folle Noire" and "le Braquet" are the main types of vine used for reds and rosés, "Grenache" and "Cinsault" for the others.
The Château de Bellet, a family-owned estate for the last 4 centuries is a "pearl" of local architecture, with its ochre-coloured façades painted with trompe l’œil and its two round towers. Ghislain de Charnacé shares his passion for wine with a small number other local vine-growers who defend this precious heritage on the hills of Crémat, Saquier or Saint-Roman.

Olives

Introduced by the Greeks more than 3000 years ago, the olive tree is present all over the French Riviera, from the hills of the back country to the coast.
Nice's olive originates from the " cailletier ", a variety of olive tree which produces tastier fruit.
It provides the foundations of "niçois" cookery : olives and olive oil, which is used to preserve numerous foods such as anchovies, sweet peppers, "sanguin" mushrooms (excellent mushrooms from the Lactaires Délicieux family). Olives and olive oil are omnipresent in local cooking and provide at the same time its originality and elegance. It is important to note that the best olive oil is not always the most strongly perfumed or full-bodied but on the on the contrary the finest with a milder flavour. Alziari, les Caves Caprioglio, le Moulin des Caracoles, la Maison de l’olive all offer a choice of : olives and olive oil, but also, tapenade, olives from " cailletier ", and picholines in pleasant boutiques with a perfume of Provence.
